Pasta Fazol
Description
Croatian pasta fažol is a hearty and comforting soup, similar to the Italian pasta e fagioli but with its own unique twist. It's a cherished Croatian dish, often enjoyed during colder months and celebrated for its simplicity and deliciousness.

Place the dry beans in a bowl and cover with water. Allow to soak overnight. Discard the water after soaking.

Add olive oil to a large stock pot and heat over medium heat.

Once the oil is hot, add the onion and bacon to the pot. Sauté until the onion starts to change color, approximately 5 minutes.

Add the ham hock, beans, and water and continue to cook over medium heat for 30 minutes.

Add the carrots, celery, garlic, parsley, tomato paste, and paprika.

Continue to cook over medium heat until the beans are soft. This may take an additional 30-60 minutes.

In a separate pot, cook the pasta according to its instructions. Once done, strain and set aside.

Once the beans are cooked, mix in the pasta.

Season with salt and pepper to taste.
Note
Ham hock and bacon are likely the easiest meats to find in the US. Other recipes include smoked pork bones, smoked pancetta, Kranski sausages, etc., which are likely much more difficult to find.
I recommend adjusting the amount of liquid and other ingredients to match your desired heartiness, depending on whether this will be a main or side course.
